  • 1 ½ cups warm water
  • 4 cups all-purpose flour

  • 2 teaspoons salt

  • 8 cups water
  • 2 tablespoons baking soda

Topping:

  • Coarse sea salt or everything bagel seasoning
  • Optional: melted butter for brushing after baking

  1. Mix the Dough:
    In a large bowl, mix sourdough starter, warm water, flour, sugar, salt, and olive oil. Stir and knead until a smooth dough forms (about 8–10 minutes by hand or 5 minutes with a mixer).

  2. Let it Rise:
    Cover the bowl and let it rise for 4–6 hours, or until doubled in size. (You can also cover and refrigerate overnight for more sour flavor.)

  3. Shape the Pretzels:
    Divide dough into 8 pieces. Roll each into a long rope and twist into a pretzel shape.

  4. Boil:
    Bring 8 cups of water to a boil and carefully add baking soda. Boil each pretzel for 20–30 seconds, then place on a parchment-lined baking sheet.

  5. Top & Bake:
    Sprinkle with sea salt. Bake at 425°F (220°C) for 15–18 minutes until golden brown. Brush with melted butter if desired.
